Bilona ghee is stable and simple to keep, but it still deserves clean handling. Most storage problems at home come from moisture, dirty spoons, heat, sunlight, or leaving the jar open too long.

Store ghee in a clean closed jar, away from direct sunlight and strong kitchen heat. Use a dry spoon every time. Do not let water, steam, dal, rice, or crumbs enter the jar.

Does ghee need refrigeration?

In most homes, ghee can be kept at room temperature if the jar is clean, dry, and properly closed. Refrigeration is usually not necessary for everyday use, though very hot kitchens may make people prefer a cooler shelf.

If you refrigerate ghee, the texture may become firmer. That is not a quality problem. Let the required amount soften naturally instead of repeatedly heating and cooling the whole jar.

Why ghee texture changes

Ghee can be grainy, semi-solid, smooth, or liquid depending on temperature, fat composition, and handling. A grainy texture is common in traditional ghee and does not automatically mean anything is wrong.

Protect the aroma

Ghee absorbs kitchen smells if stored carelessly. Keep the lid closed and avoid placing it near strong spices, open masalas, or smoke. The aroma should remain clean, dairy-rich, and warm.
